  • 4ย cakesย Lotus Foods Organic Jade Pearl Riceโ„ข Ramen
  • ยผย cupย soy sauce or tamari
  • 1ย tbspย maple syrup
  • 1ย tbspย toasted sesame oil
  • 15-20ย shiitake mushrooms,ย washed & sliced
  • ยผย cupย water
  • 2ย tbspย neutral high-heat oil,ย divided
  • 1ย bunch broccolini,ย washed & trimmed
  • ยฝย red pepper,ย washed & sliced into bite-sized pieces
  • 1ย small zucchini,ย washed & spiralized
  • 1ย yellow squash,ย washed & spiralized
  • 1ย carrot,ย washed & spiralized
  • green scallions,ย sliced

    Cook noodles al dente according to directions on package. Rinse with cold water and set aside.

    Combine soy sauce, maple syrup, and toasted sesame oil in a small bowl.

    Add mushrooms and water to a wok (or a large, deep-sided skillet). Simmer until water has cooked off. Add 1 tbsp neutral oil and sautรฉ mushrooms until browned.

    Add broccolini and red pepper, sautรฉ until broccolini is bright green. Remove everything from pan.

    Add noodles to pan. Add 1 tbsp neutral oil and toss until noodles start to lightly brown.

    Add spiralized vegetables. Toss for less than 1 min.

    Return ocooked vegetables to pan and toss in the sauce. Stir fry until hot.

    Serve immediately with green scallions.
