Ingredients

Salad

  • 2 cakes Lotus Foods Organic Jade Pearl Rice™ Ramen
  • 1 large zucchini julienned
  • 2 large carrots julienned
  • 1 red or orange bell pepper thinly sliced
  • 1 cup purple cabbage chopped
  • ¼ cup cilantro leaves
  • 1 cup frozen edamame, thawed (optional)

Dressing

  • 2 scallions chopped
  • 2 tbsp sunflower seed butter
  • 1 large lime, juice + 1 tsp. zest
  • ¼ cup coconut aminos
  • 1 tbsp ginger freshly grated
  • 1 tbsp coconut nectar

Organic Jade Pearl Rice™ Ramen (4 Ramen Cakes)

    Cook noodles according to package directions, rinse with cold water and drain.

    Combine cooled noodles and vegetables in a large bowl.

    Whisk together dressing ingredients (using a hand held immersion blender works as well).

    Pour dressing over noodle veggie mix.

    Toss lightly and serve.
