  • 2ย cupsย purple cabbage,ย shreddedย 
  • 1ยฝย cupsย carrots, cut intoย matchsticks
  • 1ย cupย yellow pepper,ย slicedย 
  • 1ย cupย red pepper,ย slicedย 
  • 1ย cupย cucumber, cut into matchsticks
  • 1ย cupย bean sprouts

Garnish

  • ยผย cupย parsley or scallions, chopped
  • ยผย cupย sliced or slivered almonds

Dressing

  • ยฝย cupย creamy almond butter
  • ยฝ cup olive oil
  • 2ย tbspย soy sauce
  • 2ย tbspย lime juice
  • 2ยฝย tbsp packed brown sugar or maple syrup
  • 3ย tspย sriracha
  • 1ย tspย sesame oil
  • 2-3ย tbspย water

    Cook noodles according to package directions, rinse with cold water and set aside.

    Prepare vegetables.

    Combine all dressing ingredients except the water in a bowl. Whisk until smooth, adding the water to thin if necessary.
