Ingredients

Dressing

  • ½ cup creamy almond butter ½ cup olive oil
  • 2 tbsp soy sauce
  • 2 tbsp lime juice
  • 2 tbsp + 1/2 tbsp packed brown sugar
  • 3 tsp sriracha
  • 1 tsp sesame oil
  • 2-3 tbsp water to thin if desired

Noodles

  • 4 cakes Lotus Foods Organic Millet & Brown Rice Ramen cooked according to package directions, rinse with cold water.
  • 2 cups shredded purple cabbage
  •  cups matchstick carrots
  • 1 cup sliced yellow pepper
  • 1 cup sliced red pepper
  • 1 cup cucumber zoodles or matchstick cut
  • 1 cup bean sprouts
  • ¼ cup chopped parsley
  • ¼ cup sliced almonds

    To make the almond dressing, combine all the ingredients except the water in a bowl. Whisk until smooth. Thinning with 2-3 water if needed.

    Toss all the ingredients above and then pour in your desired amount of almond dressing. Mix to combine and serve topped with sliced almonds and parsley.
