Ingredients

  • 2 cakes Lotus Foods Organic Millet & Brown Rice Ramen
  • 1 tbsp olive oil
  • ½ cup broccoli florets sliced
  • ½ cup cherry tomatoes sliced
  • ½ cup carrots shredded
  • ½ cup English peas
  • 1 tbsp butter
  • 1 tbsp lemon juice
  • ¼ tsp salt-free seasoning
  • ½ small avocado optional

    Preheat oven to broil (500°F).

    Place veggies on a lined baking sheet, drizzle with oil and add seasoning. Toss until oil and seasoning is combined.

    Roast veggies for 10 mins or until cooked as desired.

    While the veggies are roasting, prepare noodles according to package instructions reserving ½ a cup of pasta water.

    In a medium sized bowl, add drained noodles, butter, lemon juice and stir until combined. Add 1 tbsp of reserved pasta water as needed if noodles begin to clump together.

    In your little’s bowl, add the noodles first, topping with the roasted veggies. Garnish with avocado and enjoy!
