Ingredients

  • 4 cakes Lotus Foods Organic Millet & Brown Rice Ramen
  •  tbsp olive oil
  • ½ onion
  • ½ red pepper sliced
  • ½ green pepper sliced
  • ½ yellow pepper sliced
  • 4 cloves garlic minced
  • 1 tbsp jerk seasoning
  • 1 can 13½ oz coconut milk
  • Salt & pepper to taste
  • 1 tsp paprika
  • 4-5 sprigs of thyme
  • ¼ cup shredded parmesan cheese

    Cook ramen noodles per directions on package.

    In a sauté pan, heat oil and cook onion and peppers for ~5-6 mins until softened.

    Add garlic and jerk seasoning and cook for another 2-3 mins.

    Pour in coconut milk and season with salt, pepper, paprika, and thyme.

    Let the sauce simmer for 5 mins and then add the noodles.

    Cook for a few more minutes then add the parmesan cheese.

    When the sauce thickens, it’s ready to serve.
