In a large pot, heat olive oil over medium-high heat. Add garlic and ginger and cook for 1 min or until fragrant, stirring frequently to avoid burning.
Add broth, sambal oelek, sesame oil, maple syrup, rice vinegar, soy sauce, and red pepper flakes. Stir well, bring to a simmer, and cook for 5-7 mins.
Turn off heat, add miso paste, and stir well.
Adjust seasoning to taste, adding a little more soy sauce, depending on preference.
Cook noodles according to package directions. Drain and rinse in cold water.
To serve, divide noodles between bowls, ladle the hot broth, and top as preferred.
