Ingredients

  • ¾ cup water
  • 4 tbsp white miso
  • 2 tbsp tahini or Asian sesame paste
  • 3 tsp sesame oil
  • ¼ tsp finely grated ginger
  • 3 garlic cloves, finely minced
  • 4 cakes Lotus Foods Organic Millet & Brown Rice Ramen
  • 3½ cups vegetable broth
  • ¾ cup plant-based creamer or oat milk
  • salt, to taste

    Toppings

    • ramen eggs, halved
    • green onions, sliced
    • bean sprouts, blanched
    • chili oil

      Whisk the first 6 ingredients together until well combined.

      Cook noodles according to directions on package, drain and rinse in cold water.

      While noodles are cooking, bring broth to a boil in a pot, then reduce to a simmer. Add seasoning from step 1 to broth, followed by creamer. Stir to combine and simmer for another minute.

      Taste and adjust flavor by adding salt if needed. Turn off heat.

      To serve, divide noodles between bowls, ladle the hot broth, and add preferred toppings.
