Heat 2 tbsp oil in a large skillet or wok over medium heat. Sauté onion until fragrant and slightly caramelized. Add garlic and mix well.

Add vegetables to skillet and stir-fry until tender-crisp (~3-4 mins).

Push vegetables to one side of skillet and add beaten eggs to the empty space. Scramble until cooked through, then mix with the vegetables.

Increase heat to high and add remaining oil. Add rice and stir-fry for a few minutes until heated through and starting to brown slightly.

Drizzle coco aminos and toasted sesame oil over the rice and vegetables. Stir well to combine and evenly distribute the coco aminos.

Season with salt, pepper, and red pepper flakes to taste. Continue to stir-fry for another 2-3 mins until everything is well combined and heated through.

Remove skillet from heat and garnish with chopped green onions, if using.
