Ingredients

  • 1ยฝ tbsp olive oil
  • 8oz mushrooms, chopped small
  • 1 cup extra firm tofu, cubed small
  • 1 carrot, chopped small
  • 1 tbsp minced garlic
  • 1 tbsp minced ginger
  • 1 Lotus Foods Organic White Jasmine Rice Heat & Eat Pouch
  • ยผ cup fresh cilantro, chopped
  • 2 tbsp soy sauce or tamari
  • ยฝ tbsp sesame oil
  • ยผ tsp black pepper
  • 2-3 tbsp olive oil (for pan-frying dumplings)
  • 16 rice paper sheets

Dipping Sauce

  • 2 tbsp chili crisp oil
  • 2 tbsp soy sauce or tamari
  • 2 tbsp black vinegar
  • ยฝ tbsp brown sugar

      Heat oil in a large non-stick pan over medium-high heat. Add mushrooms, tofu, carrot, garlic, ginger, rice, cilantro, soy sauce/tamari, sesame oil, and black pepper. Sautรฉ for 5 mins, then set aside.

      Fill a large bowl with warm water. Dip a sheet of rice paper into the water for 30 seconds, then shake off any excess water and place it on a flat surface.

      Place 2-3 tbsp of the filling in center of rice paper. Carefully fold rice paper over the filling, creating a neat package. Repeat this process with a second layer of rice paper to ensure there is no breakage.

      Heat oil in a large non-stick pan over medium-high heat. Pan-fry dumplings until golden brown on each side (~2-3 mins per side).

      Combine ingredients for dipping sauce in a bowl and serve with dumplings.
