Heat oil in a large non-stick pan over medium-high heat. Add mushrooms, tofu, carrot, garlic, ginger, rice, cilantro, soy sauce, sesame oil, and black pepper. Sauté for 5 mins, then set aside.

Fill a large bowl with warm water. Dip a sheet of rice paper into the water for 30 seconds, then shake off any excess water and place it on a flat surface.

Place 2-3 tbsp of the filling in center of rice paper. Carefully fold rice paper over the filling, creating a neat package. Repeat this process with a second layer of rice paper to ensure there is no breakage.

Heat oil in a large non-stick pan over medium-high heat. Pan-fry dumplings until golden brown on each side (~2-3 mins per side).

Combine ingredients for dipping sauce in a bowl and serve with dumplings.
