Ingredients

  • ¼ cup hot chili oil plus more for garnish (optional)
  • 1 yellow onion diced
  • 1 quart Thai coconut broth
  • 26 oz chopped tomatoes
  • 10 oz firm tofu diced
  • 1 pkg Lotus Foods Organic Brown Udon Rice Noodles
  • ½ cup cilantro roughly chopped
  • 1 lime cut into wedges

Organic Brown Udon Rice Noodles

    In a medium pot, heat the chili oil until shimmering. Add the onions and sauté until soft and translucent.

    Add broth and chopped tomatoes and bring to a low boil, then reduce to a simmer.

    Add tofu and continue to simmer until softened (~5 mins).

    While the broth is simmering, cook noodles per instructions on package less 1 min of recommended cooking time. The noodles will continue to cook in the broth on serving.

    Divide noodles among 4 bowls and top with hot soup.

    Top with cilantro, fresh lime juice and chili oil, if desired.
