In a large pot, heat coconut oil over a medium heat until it melts. Add onion, stir and cook until soft and translucent (~3-4 mins).

Add rice and stir to coat evenly with oil.

Stir coconut milk and pour into the pot, followed by the water, salt, and sugar.

Bring the mixture to a boil. Stir and reduce the heat to low. Cover and cook for 20 mins or until the water is absorbed and the rice is tender.

Turn off heat and let rice sit with the lid on for 5 mins.

When ready to serve, fluff with a fork and top with fried shallots.
