Cook rice according to directions on package. Fluff and set aside.

Assemble other luau side dishes such as lomi salmon, poi, and mac salad in separate bowls.

Select Sauté on the Instant Pot. Drizzle some oil into the pot and brown all sides of the pork. Remove and set aside.

Add water, liquid smoke, and half the salt to the pot. Stir and scrape off the brown parts from the pot.

Place pork back into pot, sprinkle with remaining salt, and cook on high pressure for 90 mins.

While pork is cooking, drizzle some oil into a sauté pan and sauté cabbage until tender.

After 90 mins, let the pressure release naturally on the Instant Pot for ~10-15 mins or until metal pin drops. Remove pork and let rest for 10-15 mins.

Shred pork with two forks then mix in cabbage and serve hot with your choice of sides.

Oven Instructions (cook time: 3-4 hours): preheat oven to 325°F; score diamond shapes into top and bottom of pork, rub salt on all sides, and coat with liquid smoke; place in large roasting pan and cover tightly with foil or, if using banana leaves and ti leaves, line pan with banana leaves and wrap pork with ti leaves; bake for 3-4 hours or until pork is fork tender and falls apart easily; while pork is cooking, drizzle some oil into a sauté pan and sauté cabbage until tender; shred pork with two forks then mix in cabbage and serve hot with your choice of sides.
