Cook noodles according to directions on package. Drain and rinse with cold water to prevent sticking. Set aside.

Meanwhile, combine dipping sauce ingredients except water in a food processor or blender. Blend until smooth, adding water as needed to reach the desired consistency. Taste and adjust seasoning if necessary.

Fill a large shallow dish or pie pan with warm water. Dip one piece of rice paper into the warm water for ~10-15 seconds until it becomes soft and pliable. Remove and place on a damp cutting board.

Place a few slices of avocado, cucumber, leafy greens, a small amount of noodles, sprouts/pea shoots, and radishes in the center of the rice paper. Fold sides of rice paper over the filling, then roll it up tightly from the bottom to the top to enclose the filling completely. Repeat with the remaining rice paper and fillings.

Serve immediately with dipping sauce.
