Ingredients

Sauce

  • ½ cup creamy peanut butter
  • 1 tsp minced garlic and/or freshly grated ginger
  • 1 tbsp sriracha
  • 2 tbsp soy sauce, tamari, or coconut aminos
  • 3 tbsp freshly squeezed lime juice
  • 2-3 tbsp water, to desired thickness

Optional Toppings

  • ½ cup carrot, julienned
  • ½ cup cucumber, thinly sliced
  • ¼ cup fresh mint leaves, loosely packed
  • 2-3 tbsp roasted peanuts, chopped
  • 1-2 tsp red pepper flakes

Organic Traditional Pad Thai Rice Noodles

    Cook noodles according to directions on package.

    While noodles are cooking, combine peanut butter, garlic and/or ginger, sriracha, soy sauce, and lime juice in a bowl. Mix until smooth.

    Gradually add water while stirring until you reach your desired consistency.

    Serve noodles with sauce and your choice of toppings.
