Prepare noodles per directions on package. Drain and set aside.
While noodles are cooking, add spinach, cilantro, miso, ginger, rice vinegar, sesame oil, garlic and water to a food processor or blender. Process until smooth. Add more water as needed until the desired consistency.
Transfer sauce to a medium skillet. Mix in noodles and cook over medium-high heat until warmed through.
Garnish with toasted sesame seeds. Serve immediately.
