Cook noodles per instructions on package. Drain and set aside.

While the noodles are cooking, heat oil in a large non-stick skillet over medium-high heat. Add shallots, garlic, carrot, cabbage, and red bell pepper and cook for 2-3 mins, stirring regularly, until vegetables begin to soften.

Add jackfruit to the pan and continue cooking for 3-5 mins.

While jackfruit and vegetables are cooking, prepare peanut sauce. Place all ingredients in a blender and blend until smooth. Taste and adjust seasoning.

Pour peanut sauce into pan with jackfruit and vegetables. Stir to coat. Heat until warmed through, then remove from heat immediately.

To serve, divide noodles between bowls, add jackfruit in peanut sauce, and garnish with fresh cilantro.
