Ingredients

  • 2 pkg Lotus Foods Organic Traditional Pad Thai Rice Noodles
  • 14 oz can unsweetened coconut milk
  • ¼ cup vegetable broth
  • 3 tbsp smooth peanut butter
  • 3 tbsp Thai red curry paste
  • 1 tbsp maple syrup
  • 1 tbsp fresh lime juice
  • 1 tbsp ginger minced
  • 2 cloves garlic, minced
  • salt, to taste

Optional Garnish

  • peanuts, chopped
  • scallions, chopped

Organic Traditional Pad Thai Rice Noodles

    Prepare noodles per directions on package. Drain and set aside.

    While noodles are cooking, whisk together coconut milk, broth, peanut butter, curry paste, maple syrup, lime juice, ginger and garlic in a medium pan.

    Cook over medium-high heat, stirring frequently. Bring to a gentle boil before reducing heat. Simmer uncovered for ~10 mins or until sauce starts to thicken. Add salt to taste.

    Mix in noodles and warm through.
