Heat oil in a medium-sized pot over medium heat. Add shallot, ginger, and garlic. Fry for 2-3 mins, until brown and fragrant. Add curry paste and cook for another minute, stirring frequently.

Add broth, coconut milk, soy sauce, coconut sugar, and fish sauce, if using. Simmer for 15 mins, stirring occasionally.

While the broth is simmering, cook noodles according to directions on package. Divide between bowls, add broth and toppings, and serve immediately.
