Combine soy sauce/tamari, white wine/water, sugar, and garlic and/or ginger (if using) in a small saucepan. Bring to a boil, lower heat to a simmer and cook for 3-4 mins until alcohol has evaporated, and sugar has dissolved, stirring occasionally.

Add cornstarch slurry to the pan while whisking and continue cooking until sauce is thick. Remove from heat.

While sauce is cooking, prepare rice according to directions on package. Serve immediately with sauce and your choice of toppings.
