Ingredients

  • ⅓ cup coconut aminos
  • ⅓ cup coconut sugar
  • 3 tbsp white miso paste
  • 3 tbsp tomato paste
  • juice from ½ a lime
  • ½ tsp sea salt
  • 1 tsp red pepper flakes
  • 3 cakes Lotus Foods Organic Millet & Brown Rice Ramen
  • sliced scallions (optional topping)
  • sesame seeds (optional topping)

    Make the sauce: In a blender or bowl, combine the coconut aminos, coconut sugar, miso paste, tomato paste, lime juice, sea salt, and red pepper flakes, and mix until smooth. It should be thick but pourable like barbecue sauce; add water as needed to thin it out.

    Cook noodles according to the package directions: add the noodles to a rolling boil over high heat, cook for about 6 minutes, then stir an additional 2 minutes to help them separate. Then drain and rinse with cold water to keep them springy.

    Toss noodles in the sauce, add the scallions and sesame seeds, and enjoy!
