Ingredients

  • 2 tbsp olive oil
  • 1 small onion, diced
  • 3 medium-sized carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 7-8 cups chicken or vegetable stock, more as needed
  • 2 bay leaves
  • 1 tbsp fresh or 1 tsp dried thyme
  • ½ pkg Lotus Foods Organic Traditional Pad Thai Rice Noodles
  • 3 cups cooked shredded chicken breast
  • ¼ cup loosely packed parsley leaves, finely chopped
  • sea salt, to taste
  • black pepper, to taste

    Organic Traditional Pad Thai Rice Noodles

      Heat oil in a large pot over medium heat.

      Add onion, carrots, and celery to the pot. Sauté for 5-7 mins, until vegetables begin to soften.

      Stir in garlic and cook for an additional minute until fragrant.

      Pour in stock and add bay leaves and thyme. Bring to a boil.

      Reduce heat to low and let broth simmer for 10 mins to allow flavors to meld.

      Break noodles into thirds and add them to the simmering broth.

      Simmer the soup for another 4 mins, or until noodles are beginning to soften.

      Stir in the chicken, parsley, salt, and pepper. Let soup cook for another 3-5 mins until chicken is heated through and noodles are completely tender.

      Ladle soup into bowls and serve warm.
