Ingredients

Sweet Chili & Sesame Dressing

  • 3 tbsp rice vinegar
  • 3 tbsp extra virgin olive oil
  • 1 tbsp sesame oil
  • 3 tbsp sweet chili sauce
  • 1 tbsp agave or to taste
  • 1 tsp tahini
  • 1 tsp stone ground mustard
  • ½ tsp salt or to taste
  • ¼ tsp black pepper or to taste

Noodles & Salad

  • 1 pkg Lotus Foods Organic Buckwheat & Brown Soba Rice Noodles
  • 1 cup English cucumber, julienned
  • 1 cup red bell pepper, julienned
  • 1 cup canary melon, julienned
  •  cups alfalfa sprouts
  • 1 cup cantaloupe, julienned
  • 1 cup purple cabbage, shredded
  •  cups pea shoots
  •  cups romaine lettuce, shredded

Garnish

  • mint leaves
  •  cup crushed roasted peanuts

    Whisk dressing ingredients until well combined. Refrigerate until ready to use.

    Prepare fruit and vegetables.

    Cook noodles according to directions on package.

    Divide noodles, fruit, and vegetables between plates/bowls.

    Garnish with mint leaves, roasted peanuts and serve with dressing on the side.
