Ingredients

Matcha Dressing

  • ½ cup cashews, soaked overnight
  • ½ cup water
  • 2 tbsp lemon juice (half lemon)
  • 2 tbsp fresh herbs (cilantro, green onion)
  • 1 tbsp maple syrup
  • 1 tbsp soy sauce
  • 1 tsp matcha green tea powder
  • 1 garlic clove, minced

    Prepare noodles according to directions on package. Drain, rinse under cold water, and set aside.

    Add all ingredients for the dressing to a high-speed blender and blend until smooth.

    Add cooked noodles, asparagus, cucumber, and radish to a large bowl. Toss with the dressing until thoroughly combined.

    Garnish with edible flowers and sliced green onions.
