Ingredients

For the dressing:

  • ยผย cupย rice wine vinegar
  • ยผย cupย soy sauce
  • 3ย tbspย toasted sesame oil
  • 3ย tbspย agave syrup
  • 1ย limeย zest & juice
  • 1ย tbspย gingerย freshly grated
  • 1ย largeย clove garlicย freshly grated

For the rice noodle salad:

  • 1ย pkgย Lotus Foods Organic Brown Pad Thai Rice Noodles
  • 2ย cupsย red or purple cabbageย finely chopped
  • 1ย cupย sugar snap peasย chopped
  • 1ย yellow bell pepperย chopped
  • 1ย largeย or 2 small watermelon radishes or rainbow beetrootย thinly sliced
  • 1ย cupย cilantroย roughly chopped
  • 1ย cupย scallionsย sliced
  • 1ย tbspย black sesame seeds

Organic Brown Pad Thai Rice Noodles

    In a small bowl, whisk together dressing ingredients.

    Cook noodles according to directions on package. Drain and rinse with cold water.

    When noodles have cooled, transfer to a large bowl and gently toss with reserved dressing, vegetables and herbs.

    Sprinkle with sesame seeds and serve immediately.
