Ingredients

  • ½ pkg Lotus Foods Organic Brown Pad Thai Rice Noodles
  • 1½ cups thinly sliced slightly underripe mango (~2 small mangoes), or 1½ cups shredded unripe/green papaya
  • 1 cup cherry or grape tomatoes, halved
  • 1 cup cooked green beans, chopped
  • ⅓ cup roasted peanuts, crushed
  • ¼ cup fresh cilantro leaves, roughly chopped

Dressing

  • 3 tbsp fish sauce
  • 2 tbsp granulated sugar
  • ¼ cup freshly squeezed lime juice
  • 2-3 tsp finely chopped red chili peppers, to desired heat preference
  • 2 tbsp water

    Organic Brown Pad Thai Rice Noodles

      Cook noodles according to directions on package. Drain and rinse with cold water to prevent sticking. Set aside.

      Meanwhile, in a small bowl, stir/whisk together the dressing ingredients until the sugar is dissolved. Set aside.

      In a large bowl, combine the noodles, mango/papaya, tomatoes, green beans, peanuts and cilantro. Pour the dressing over the noodle salad and toss to combine.

      Serve immediately.
