Ingredients

  •  cup frozen green peas
  • 1 cup ripe papaya, diced
  • 1 Lotus Foods Organic White Jasmine Rice Heat & Eat Pouch
  • 1 avocado, sliced
  • 2 cucumbers, sliced
  • 1 carrot, sliced (or use a peeler to make ribbons)
  • 1 small red onion, sliced (optional)
  • ½ jalapeño, sliced
  • 1 handful microgreens
  • 1 tsp sesame seeds

Poke marinade (makes ~½ cup marinade)

  • ½ cup tamari or light soy sauce
  • 1 tsp fresh ginger, grated
  • 1 tsp (or more) sambal oelek chili sauce
  • 1 tsp miso
  • ½ sheet of nori, cut into small pieces
  • 1 tsp maple syrup
  • 1 tsp sesame oil
  • sesame seeds (for garnish)

    Cook peas per directions on package and allow to cool.

    Mix ingredients for the marinade until well combined, then pour over diced papaya and leave for at least 10 mins.

    Prepare rice per directions on package and divide evenly between 2 bowls.

    Arrange peas, avocado, cucumbers, carrot, onion, jalapeños, microgreens, and marinated papaya, then sprinkle with sesame seeds.
