Ingredients

  •  cup frozen green peas
  • 1 cup of ripe papaya diced
  • 1 Lotus Foods Organic White Jasmine Heat & Eat Rice Pouch
  • 1 avocado sliced
  • 2 cucumbers sliced
  • 1 carrot sliced or use a peeler to make ribbons
  • 1 small red onion sliced (optional)
  • ½ jalapeño sliced
  • 1 handful micro greens
  • 1 tsp sesame seeds

Poke marinade (makes ~½ cup marinade)

  • ½ cup tamari or light soy sauce
  • 1 tsp fresh ginger grated
  • 1 tsp or more sambal oelek chili sauce
  • 1 tsp miso
  • ½ sheet of nori cut into small pieces
  • 1 tsp maple syrup
  • 1 tsp sesame oil
  • Sesame seeds for garnish

    Cook peas per directions on package and allow to cool.

    Mix ingredients for the marinade until well combined.

    Pour over diced papaya and leave for at least 10 mins.

    Prepare rice per directions on package and divide evenly between 2 bowls.

    Arrange peas, avocado, cucumbers, carrot, onion, jalapeños, micro greens, and marinated papaya, then sprinkle with sesame seeds.
