Combine sauce ingredients in a small mixing bowl. Set aside.

Whisk egg and pan fry on a low heat. Slice thinly when cooled, set aside.

Bring 6 cups of water to a boil. Add dashi ingredients to a large spice bag and drop into boiling water. Simmer for 5-10 mins then discard.

Add noodles into boiling water and cook for ~3 mins.

Add chopped veggies to pot and cook for an additional 2 mins. Add salt and pepper to taste.

Divide into serving bowls. Add egg, sauce and desired garnish, such as scallions and seaweed. Serve hot.
