To make the meatballs, combine pork, green onions, carrots, egg, tapioca flour, salt, pepper, and oyster sauce. Form into 1½” balls and set aside.

Sauté garlic and onion in a pot until fragrant (~2-3 mins).

Add broth, bring to a boil, then carefully add meatballs one by one and simmer for 20 mins.

Prepare noodles according to directions on package, then add to the pot of simmering meatballs. Mix and cook in the broth for 1-2 mins.

Add spinach, stir, and turn off heat.

Ladle soup into serving bowls, top with green onions and serve.
