Ingredients

  • 3 cups Lotus Foods Organic Brown Jasmine Rice
  • 2 tbsp extra-virgin olive oil
  • 1 cup celery, chopped
  • 1 cup red bell pepper, chopped
  • 1 small yellow onion, finely chopped
  • 3 cloves garlic, finely minced
  • 28 oz can diced tomatoes or ½ cup simple tomato sauce
  • 1 tbsp cajun spice mix, to taste
  • ½ tsp fresh cracked pepper, to taste
  • ½ tsp sea salt, to taste

Organic Brown Jasmine Rice

    Prepare rice according to package directions (or use leftover rice).

    Heat oil over medium heat in a large skillet. Add celery, bell pepper and onion. Sauté 4-5 mins.

    Add garlic and stir well. Continue cooking for another 1-2 mins.

    Add rice, diced tomatoes, spice mix, pepper and salt. Stir until all sauce has been evenly distributed throughout the rice.

    Taste and adjust seasoning if desired. Serve warm.
