Prepare noodles per directions on package. Rinse in cold water and set aside.
Peel carrots and use peeler to make carrot noodles.
Dice mango and bell pepper, thinly slice cabbage, and wash and tear mint.
Combine rice vinegar, tamari, sesame oil, maple syrup, and lime juice. Toss in noodles and veggies.
Serve cold with mint leaves, sesame seeds, lime wedges, and crushed red pepper or togarashi seasoning.
