Ingredients

  • 2ย tbspย olive oil
  • 3ย green onions,ย chopped
  • 1ย tbspย fresh ginger,ย finely chopped
  • 1ย mediumย carrot,ย chopped
  • 1ย stalkย celery,ย chopped
  • 3lbsย tomatoes,ย seeds removed, chopped
  • 2ย cupsย vegetable or chicken stock
  • 1ย tbspย tamari
  • ยผย cupย white miso
  • 2ย tbspย rice vinegar
  • 2ย cakesย Lotus Foods Organic Forbidden Riceยฎ Ramen

Garnish

  • 1ย hard-boiled egg,ย halved
  • green onion,ย diagonal cut

Organic Forbidden Riceยฎ Ramen (4 Ramen Cakes)

    Heat olive oil in a medium saucepan, add green onions and ginger and sautรฉ for 3 mins on low heat.

    Add carrots, celery, tomatoes and stock. Bring to a boil, then drop heat down to a simmer.

    Cook until carrots are tender. Remove from heat and add tamari, miso and rice vinegar, blend with an immersion blender until smooth. Set aside.

    In a separate medium saucepan, bring 4 cups of water to a boil. Add noodles and cook for 4 mins until tender. Rinse and strain.

    Place noodles in a bowl, pour soup around noodles, and garnish with egg and green onions.
