Ingredients

Marinade:

  • ½ cup tamari
  • ¼ cup mirin
  • 2 tbsp thinly sliced scallions
  • 1 tbsp sriracha
  • 2 garlic cloves chopped
  • ¼ tsp powdered ginger

Soup:

  • 2 Lotus Foods Spicy Kimchi Rice Ramen Noodle Soup Cup prepared
  • 1 skirt steak
  • ½ cup sugar snap peas
  • ¼ cup chopped fresh basil
  • 2 tbsp chopped cashews
  • Cherry tomatoes for garnish optional

    Whisk all marinade ingredients together in a medium sized bowl. Add skirt steak and marinate in the refrigerator for a few hours.

    After marinated, prepare grill or grill pan, turning to medium-high heat. Discard excess marinade and prepare skirt steak. Cook for ~3-4 minutes per side. Let rest 5 minutes under foil while juices redistribute. Slice thinly against the grain.

    Prepare soup cups according to package directions.

    In the same grill pan, sauté sugar snap peas with 1 tbsp olive oil. Sprinkle with salt and pepper and sauté for about 5 minutes.

    Add all ingredients together in a bowl and top with tomatoes, chopped basil and cashews.
