In medium size pot, heat oil over medium-high heat.
Add sofrito, minced garlic, roasted red peppers, vegan ham and 1 cup of water. Stir well and let simmer for 1 min.
Add gandules and stir well. Cover and let simmer for 2 mins.
Add rice and 5½ cups of water and spices. Stir well and cover.
Cook on medium-high heat until all the water is visibly absorbed from top of rice, then lower to medium-low heat to finish cooking.
