Ingredients

  • 2 tbsp olive oil
  • 1 cup sofrito blended white onion, tomato paste, red bell pepper, green bell pepper, yellow bell pepper, cilantro & recao
  • 1 tbsp minced garlic
  • 2 roasted red peppers, chopped
  • 3 slices vegan “ham” (optional), chopped
  •  cups water, divided
  • 2 cans gandules (pigeon peas)
  • 3 cups Lotus Foods Organic White Jasmine Rice
  • adobo + spices salt, pepper & oregano (to taste)

Organic White Jasmine Rice

    In medium size pot, heat oil over medium-high heat.

    Add sofrito, minced garlic, roasted red peppers, vegan ham and 1 cup of water. Stir well and let simmer for 1 min.

    Add gandules and stir well. Cover and let simmer for 2 mins.

    Add rice and 5½ cups of water and spices. Stir well and cover.

    Cook on medium-high heat until all the water is visibly absorbed from top of rice, then lower to medium-low heat to finish cooking.
