Ingredients

  • 15 oz unsweetened coconut milk
  •  cups fresh pineapple, cut into chunks, or 15 oz. can pineapple packed in juice
  • 1 cup water
  • 1 tbsp raw or coconut sugar
  • pinch salt
  •  cups Lotus Foods Organic Tricolor Blend Rice
  • 1 lime, sliced into wedges (optional)

Organic Tricolor Blend Rice

    Add coconut milk, pineapple chunks, water, sugar, salt and rice to a medium saucepan. Bring to a boil over high heat.

    Cover, reduce heat, and simmer for 30 mins.

    Remove from heat and let stand for 5 mins.

    Fluff rice with a fork and serve with lime wedges. Add to a pineapple boat for bonus points!
