Ingredients

Rice

  • 1 cup Lotus Foods Organic Tricolor Blend Rice
  • 1 tbsp vegan butter
  • ½ cup onion, chopped
  • 2 garlic cloves, minced
  • ½ tsp cumin
  • ½ tsp cinnamon
  • ½ tsp coriander
  • ¼ tsp cardamom & turmeric
  • ¼ tsp turmeric
  • 2 cups vegetable broth

Toppings

  • 1 cup cooked vegan "meat" crumbles
  • ½ cup mixed raisins
  • ½ cup dried cherries
  • ½ cup dried cranberries
  • ¼ cup slivered almonds
  • ¼ cup toasted pine nuts
  • ¼ cup shelled pistachios
  • ¼ cup chopped parsley leaves, loosely packed
  • 1 tsp chopped chives

Organic Tricolor Blend Rice

  • 1

    Place rice in a strainer and rinse for 1-2 mins. Let drain for 5 mins.

    Melt butter in a pot, then add onion and sauté for 2 mins. Add garlic and cook for another minute.

    Stir in spices, then add rice and let toast and absorb the spices for 1-2 mins.

    Add broth, bring everything to a boil, then lower heat to a simmer, cover and let cook for 20 mins, or until all liquid has been absorbed.

    Remove from heat then let sit, covered, for 10 mins before fluffing with a fork.

    Add all toppings and serve.
