Ingredients

Salad

  •  cups Lotus Foods Regenerative Organic Brown Basmati Rice
  • 2 cups parsley, chopped
  • 1 shallot, finely diced
  • 1 pint cherry tomatoes, halved
  • ½ cucumber, diced
  • 1 cup artichoke hearts, chopped
  • ½ cup kalamata and green olives, sliced
  • 1 tsp fresh thyme leaves (or ½ tsp dried)
  • 2 cloves garlic, grated finely or minced
  • 1 can chickpeas, drained & rinsed

Dressing

  •  cup extra virgin olive oil
  • ¼ cup lemon juice
  • 1 tsp oregano
  • 2 tsp Dijon mustard
  • tsp sea salt
  • ½ tsp freshly cracked pepper

Regenerative Organic Brown Basmati Rice

    Prepare rice per directions on package.

    Prepare veggies and add to a large mixing bowl along with chickpeas.

    In a small bowl, whisk dressing ingredients together.

    Once rice is cooked, let it stand, covered, for a few minutes, then fluff with a fork and let cool. Once cooled at least halfway, combine rice with veggies and stir.

    Add dressing and stir. Serve with lemon wedges.⁣

    Store leftovers in fridge. For best taste, let sit out after removing from fridge so it's not cold.
