Prepare rice per directions on package.

Prepare veggies and add to a large mixing bowl along with chickpeas.

In a small bowl, whisk dressing ingredients together.

Once rice is cooked, let it stand, covered, for a few minutes, then fluff with a fork and let cool. Once cooled at least halfway, combine rice with veggies and stir.

Add dressing and stir. Serve with lemon wedges.

Store leftovers in fridge. For best taste, let sit out after removing from fridge so it's not cold.
