Ingredients

Salad Ingredients:

  •  cups Lotus Foods Organic Brown Basmati Rice dry
  •  cups plus 2 tbsp water
  • 1 can chickpeas drained and rinsed
  • 2 cups parsley chopped
  • 1 shallot finely diced
  • 1 pint cherry tomatoes halved
  • ½ cucumber diced
  • 1 cup artichoke hearts chopped
  • ½ cup kalamata and green olives sliced
  • 1 tsp fresh thyme leaves or 1/2 tsp dried
  • 2 cloves garlic grated finely or minced

Dressing Ingredients:

  •  cup extra virgin olive oil
  • ¼ cup lemon juice
  • 1 tsp oregano
  • 2 tsp dijon mustard
  • ¾ tsp kosher salt
  • ¼ tsp pepper

    Prepare rice per package instructions.

    Prepare veggies and add to a large mixing bowl along with the chickpeas.

    In a small bowl, whisk the dressing ingredients together.

    Once rice is cooked let it stand, covered, for a few minutes. Fluff it with a fork and let it cool for a bit. Once the rice is cooled at least halfway, combine the rice with the veggies and stir thoroughly.

    Add dressing and stir thoroughly. ⁣

    Store in the fridge. Tastes great warm or cold..
