Ingredients

Pickled Cucumber

  • 1ย  cucumber,ย peeled into ribbons then cut into โ…“ length
  • 2ย tbspย sushi vinegar

Pickled Radishes

  • 2ย radishes,ย thinly sliced
  • 1ย tbspย plum vinegarย (or substitute rice vinegar & a pinch of salt)
  • 1ย tbspย rice vinegar
  • 1ย tspย maple syrup

Sushi Rice

To Assemble

  • extra-virgin olive oil spray,ย for greasing
  • 1ยฝย nori sheetsย (cut 1 nori sheet into 4 squares & ยฝ nori sheet into 2 squares)
  • ยฝย avocado,ย thinly sliced
  • 1ย tbspย chives, finely chopped
  • 1ย tspย toasted white sesame seeds
  • 1ย tspย toasted black sesame seeds
  • soy sauce,ย for serving

    Cook rice per directions on package.

    To make pickled cucumber: toss cucumber and sushi vinegar in a small bowl. Set aside.

    To make pickled radish: toss radishes, plum vinegar, rice vinegar, and maple syrup in a small bowl. Set aside.

    To make sushi rice: combine cooked rice and sushi vinegar in a medium bowl.

    Spray oil into donut pan to grease. Spread rice into pan and gently press to form into donut shape. Flip pan to transfer sushi donuts to a clean work surface.

    Place each donut onto a piece of nori sheet and garnish with pickled cucumber, pickled radish, avocado, chives, and sesame seeds. Serve with soy sauce.
