Ingredients

Spicy Tofu

  • 21 oz baked tofu, cut into ¼” cubes (for best results, try store-bought baked tofu in flavors like savory or sesame ginger). Alternatively, substitute the tofu with
    other protein options, such as canned tuna, imitation crabmeat, or smashed
    chickpeas.
  • 4 tbsp traditional or vegan mayonnaise
  • 2 tbsp sriracha
  • ¼ tsp salt or to taste
  • ¼ tsp ground black pepper or to taste
  • 1½ cups traditional or vegan shredded mozzarella
  • 1 tbsp furikake

Organic Jade Pearl Rice™

    Cook the rice according to directions on the package.

    Meanwhile, preheat the oven to 350°F. Lightly grease an 8 x 8-inch baking dish with a little avocado oil, or line with parchment paper.

    In a large bowl, gently mix the baked tofu, mayonnaise, sriracha, black pepper, and 1 cup of mozzarella. Set aside.

    In a small bowl, combine the rice vinegar, cane sugar, and salt. Warm in the microwave until the sugar dissolves.

    In another large bowl, gently combine the cooked rice with the vinegar mixture. Transfer the rice to the baking dish, spread evenly and firmly pack down.

    Place the 8 x 8-inch sheet of nori on top of the rice, then layer the tofu mixture on top.

    Sprinkle furikake and the remaining mozzarella over the tofu mixture.

    Bake in oven for ~10 mins, then remove and let cool for ~5 mins.

    Top with cucumber, avocado, and microgreens. Drizzle with spicy mayo if desired. Then slice into individual portions. Serve as it is or on a small sheet of nori.
