• 1 lb lean ground beef
  • ½ small onion
  • 1 egg
  • ¼ cup gluten-free breadcrumbs
  • 2 tbsp fresh basil chopped
  • ¼ tsp red pepper flakes optional
  • 2 cloves garlic chopped
  • salt & pepper to taste
  • 2 tbsp olive oil divided
  • 3 garlic cloves diced
  • 1 28 oz can crushed tomatoes
  • 2 tbsp tomato paste
  • ½ tsp dried oregano
  • ¼ cup fresh basil chopped
  • salt & pepper to taste

Organic Brown Pad Thai Rice Noodles

    In a medium bowl mix the beef, onion, egg, breadcrumbs, basil, red pepper flakes, garlic, salt and pepper with a spoon. Use a small ice cream scoop to form small balls and place on a plate.

    Heat 1 tbsp olive oil in a non-stick skillet over medium high heat. Brown meatballs on all sides being careful when you turn. Remove from heat and set aside (they do not have to be cooked through because they will continue to cook in the sauce).

    Heat 1 tbsp olive oil in a Dutch oven. Add garlic and brown for a minute or two. Add crushed tomatoes, tomato paste, oregano, basil, salt and pepper. Bring to a boil and simmer for 10 mins.

    Add meatballs carefully into sauce. Turn to low and cook for ~10 mins or until meatballs are cooked through.

    Cook noodles according to package directions. Drain and rinse with water.

    Serve immediately with meatballs and sauce. Top with cheese and fresh basil, as preferred.
