Ingredients

  • ยฝย cupย Lotus Foods Regenerative Organic White Basmati Rice
  • 2ย 14oz cansย light coconut milk
  • 1ย cupย + ยฝ cup full-fat coconut milk
  • ยผย tspย salt
  • 1ย tspย + ยฝ tsp vanilla extract
  • ยผย cupย + 3 tbsp organic sugar
  • strawberries
  • blueberries

Regenerative Organic White Basmati Rice

    Bring rice, light coconut milk, and ยฝ cup full-fat coconut milk to a boil in a large pan.

    Reduce to low and simmer for ~20 mins, or until rice is tender, stirring frequently.

    Add in the rest of the full-fat coconut milk, salt, vanilla, and sugar, and continue stirring and simmering for 20 mins.

    Remove from heat and set aside to cool.

    Once cooled, serve with blueberries, and strawberries.
