  • 1 cup Lotus Foods Organic Red Rice
  • 2 cups sweet potato, peeled & chopped
  • ½ tbsp vegetable oil
  • ½ tbsp taco seasoning, to taste
  • salt and pepper, to taste
  • black beans
  • corn
  • lettuce shredded
  • pico de gallo
  • jalapeños
  • vegan ranch
  • cilantro, chopped

Organic Red Rice

    Cook rice according to directions on package.

    Preheat oven to 400°F.

    Line a small baking pan with parchment paper.

    In a medium bowl, toss sweet potato pieces with vegetable oil and taco seasoning. Spread out on baking pan and bake for 20-25 mins, or until tender, then sprinkle with salt and pepper while sweet potato is still hot and toss to combine.

    To serve, divide cooked rice between bowls and top with black beans, corn, shredded lettuce, pico de gallo, roasted sweet potato, jalapeños, vegan ranch & chopped cilantro.
