Cook noodles according to directions on package.

Meanwhile, whisk together mayo, soy sauce, nutritional yeast, egg yolk, garlic, and onion powder in a medium bowl. Add broth (or a splash of ramen cooking water) until the sauce is smooth and creamy.

Add hot noodles to the bowl and toss immediately so the heat thickens the sauce without scrambling the yolk. Add more broth or cooking water to loosen the sauce if needed.

Serve warm and top with bacon or ham, green onions, or a spoonful of crispy chili oil.
