Combine rice, water, and salt in a saucepan. Bring to a boil over a high heat, cover, reduce heat and simmer for 10 mins. Let cool to room temperature.

Combine rice, cucumber, onion, and sesame seeds in a large bowl. Add dressing and toss gently until blended. Serve at room temperature.
