Cook rice according to directions on package.

In a large bowl, combine crispy chili oil, rice vinegar, maple syrup, and soy sauce or tamari. Whisk until uniform.

Add cucumber and radishes to the bowl and stir until evenly coated by the dressing. Set aside until the rice is cooked.

Drain rice and rinse under cold water. Add to the bowl together with crushed peanuts and cilantro. Stir until evenly mixed.

Serve immediately or refrigerate until needed.
