Ingredients

  • ½ cup Lotus Foods Regenerative Organic White Basmati Rice
  • 14oz cans light coconut milk
  •  cups full-fat coconut milk
  • ¼ tsp salt
  •  tsp vanilla extract
  • ¼ cup + 3 tbsp organic sugar
  • ½ tsp ground cinnamon
  • ½ cup peaches, skin removed & cubed

Regenerative Organic White Basmati Rice

    In a large pan, bring rice, light coconut milk and ½ cup full-fat coconut milk to a boil. Reduce to low and simmer for ~20 mins, or until rice is tender, stirring frequently.

    Add in the rest of the full-fat coconut milk, salt, vanilla extract, sugar, and cinnamon, continue stirring and simmering for another 20 mins.

    Add peaches, stir entire mixture for ~1 min.

    Remove from heat, fill popsicle molds. Place in freezer for at least 4 hours.
