Ingredients

  • ½ cup soy sauce or tamari
  • ½ cup dry white wine or water
  • ⅓ cup brown or white sugar
  • ½ tsp finely grated garlic and/or ¼ tsp finely grated ginger (optional)
  • ½ tbsp cornstarch mixed with 2 tbsp cold water

      Combine soy sauce/tamari, white wine/water, sugar, and garlic and/or ginger (if using) in a small saucepan. Bring to a boil, lower heat to a simmer and cook for 3-4 mins until alcohol has evaporated, and sugar has dissolved, stirring occasionally. If using sauce for a marinade, remove from heat and cool until needed.

      For a thicker sauce, add cornstarch slurry to pan while whisking and continue cooking until sauce is thick. Remove from heat.

      Serve immediately or refrigerate in an airtight container for up to one week.
