Ingredients

  • 1 cup Lotus Foods Regenerative Organic White Basmati Rice
  • 1½ tbsp freshly squeezed lemon juice
  • ½ tbsp Dijon mustard
  • 1 tbsp honey or maple syrup
  • salt and pepper, to taste
  • ½ cup dried cranberries
  • 2-3 oranges, segmented
  • ½ cup toasted almonds
  • ¾ cup loosely-packed parsley, finely chopped

      Cook rice according to directions on the package and allow to cool slightly.

      In a large bowl, whisk together lemon juice, mustard, and honey/maple syrup. Season with salt and pepper.

      Add cooked rice, cranberries, orange segments, almonds, and parsley. Toss gently to combine.

      Serve immediately or chill in the refrigerator before serving.
