Heat oil in a large sauté pan on a medium heat. Add onion, red pepper and garlic and cook for 3-4 mins.

Add spices and toast for 1 min. Add cubed chicken and cook for 5-7 mins or until chicken is cooked through, stirring frequently.

Add coconut milk and lime juice and simmer for an additional 5 mins.

Prepare rice per directions on package.
