Ingredients

  • 1ย tbspย olive oil
  • 1ย small onion,ย diced
  • ยฝย red bell pepper,ย diced
  • 2ย garlic cloves,ย finely chopped
  • 1ย tbspย curry powderย or more, as desired
  • ยฝย tspย ginger powder
  • 2ย boneless skinless chicken breasts,ย cut into 1-inch cubes
  • 3ย ozย full-fat coconut milk
  • juice of half a lime
  • 1ย Lotus Foods Organic Brown Jasmine Rice Heat & Eat Pouch
  • salt & pepper,ย to taste
  • fresh cilantro,ย roughly chopped

Organic Brown Jasmine Rice Heat & Eat Pouch

    Heat oil in a large sautรฉ pan on a medium heat. Add onion, red pepper and garlic and cook for 3-4 mins.

    Add spices and toast for 1 min. Add cubed chicken and cook for 5-7 mins or until chicken is cooked through, stirring frequently.

    Add coconut milk and lime juice and simmer for an additional 5 mins.

    Prepare rice per directions on package.

    Serve chicken over rice and garnish with fresh cilantro.
