Ingredients

  • 4 cups milk
  • 2 cups half & half
  • 2 cups Lotus Foods Organic Red Rice
  • ⅓ cup granulated sugar
  • 1 cup puréed strawberries
  • ½ tbsp vanilla extract
  • ½ tsp ground cinnamon powder
  • For garnish: sliced strawberries and shredded coconut

    Organic Red Rice

      Place 3 cups milk, 1 cup half & half, and rice in a pot. Bring to a simmer then reduce to low heat. Cover and cook for 45 mins, stirring occasionally.

      Pour in remaining milk and half & half and cook for another 45 mins until rice is softened.

      Once mixture has thickened, add sugar, puréed strawberries, vanilla and cinnamon. Simmer for 5 more mins.

      Turn off heat. Garnish with sliced strawberries and shredded coconut. Serve warm or chilled.
