    Heat 1 tbsp olive oil in a skillet over a medium heat. Add onion with salt and pepper to taste and sauté over medium-high heat for ~5 mins, stirring often, until onions are golden in color.

    Add remaining tbsp of oil to the pan, along with the eggplant and more salt and pepper. Cook over medium heat for 10 mins, stirring occasionally, until soft and fragrant. If pan looks dry, add a splash of water.

    Add sausage to pan and brown for 5 mins over medium heat. Meanwhile, prepare ramen noodle soup per directions onpackage.

    Pour noodles and soup into a bowl, and add sausage, eggplant and onions on top.
