Kaipen Five Spice Cookies

  • 2 1/4 cup flour
  • 1/2 cup toasted/ground Kaipen
  • 1 teaspoon five spice powder
  • 2 teaspoon baking powder
  • 1/2 cup chili butter
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla

In a mixer beat together eggs, sugar, butter. Add dry ingredients, then vanilla. These are roll out cookies, so on a lightly floured board, roll out the chilled dough. The dough should be chilled enough to roll not sticking to board, but not so chilled as to be a difficult roll. Roll out about 1/4 inch thick, cut as desired. Sprinkle with sugar. Bake 350 degree F on parchment on a 12 inch cookie sheet. You could also roll dough into a rope, about 2 inch diameter, chill wrapped, and cut into coins 1/4 inch thick.
